Oat Cereal Breakfast Bar

Ingredients:

  • 1 cup Oats
  • 1 cup Flour
  • 1 tsp Baking soda
  • 1/2 cup Dried fruit
  • 1 Tsp Salt
  • 1 Egg
  • 1/2 cup Milk
  • 2 tbsp Honey
  • 1/4 cup neutral oil (Vegetable or Canola)
  • 1/2 tsp Vanilla extract

Preparation:

  1. In a large bowl mix your dry ingredients and fruit.
  2. Whisk together milk, eggs, honey, oil, and vanilla.
  3. Add the wet ingredients to the dry ingredients, and mix together until fully incorporated, being careful not to overmix.
  4. Press batter into a parchment lined casserole dish, into an even 15 cm rectangle
  5. Let batter rests for 30 minutes
  6. Bake at 350 degrees Fahrenheit for 20 minutes, or until the edges have just begun to brown.
  7. Let rest on a wire rack until cool, and cut into bars.

Tips: Make sure to give yourself lots of time for this recipe, as the oats will need it to absorb the moisture. Mix in nuts and dark chocolate instead of the dried fruit if you want to try a different flavour profile. Feel free to fold in any breakfast cereal to make the bars lighter and stretch farther.
