Whole Wheat Spinach and Feta Quick Bread

Ingredients:

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp butter, cold and grated
  • ½ cup crumbled feta
  • ½ cup chopped spinach
  • 1 tsp grated onion
  • ½ cup whole milk

Preparation:

  1. Preheat oven to 425 degrees Fahrenheit, line a 6 inch cast iron pan with parchment paper.
  2. In a medium bowl, sift together dry ingredients: flour, baking powder, and salt.
  3. Add the butter and crumble until small pea-sized balls form.
  4. Add the remaining ingredients and mix until just combined: feta, spinach, milk, and onion.
  5. Press the dough gently into your lined pan, and score into quarters.
  6. Bake for 14-16 minutes, until golden brown and cooked through.

Tips: For a crispier top, brush the top of the pastry with melted butter before it goes into the oven. Any cheese you like can be substituted instead of the feta, and the spinach can be substituted as well.
